SUBSTANCE: invention relates to manufacturing technology of meat-and-vegetable canned food. Production method of preserves "Kuiruk Koshkon" includes cutting and freezing chives, blanching and mincing garlic, cutting mutton fat oil, mixing the listed components under oxygen-free conditions with acetic acid, table salt and black bitter pepper and aging till they are marinated, cutting mutton, stuffing if with the marinated mixture, breaded with wheat flour and frying in melted fat, cutting and freezing asparagus and mixing it under oxygen-free conditions with table salt to obtain garnish, packing mutton, garnish and bone broth, sealing and sterilising.
EFFECT: obtaining new canned food with improved digestibility as compared to a similar dish.
