FIELD: food industry.

SUBSTANCE: invention is related to milk industry. Production method of milk sugar out of salty whey provides for warming salty whey up to 35-40°C, skimming at that temperature, desalination of salty whey, on its first stage nanofiltration is performed at pressure 2.0-2.5 MPa till desalination level 20-25% and dry substances content 18-20%. On the second stage electrodialysis of filtered whey is performed till it becomes 0.5-0.6%. It is brightened by thermal acid concretion with acidification till pH 4.4-4.6, kept at temperature 90-95°C and separate proteins at that temperature. Cooling and condensation at temperature 55-60°C till dry substances content 60-65%. Lactose is crystallised in syrup during 20-22 hours while cooled down to 8-10°C. Crystals are separated by centrifugation at this temperature and dried at 120-140°C. Milk sugar is obtained with factor of merit 95-97%.

EFFECT: invention provides increased speed of obtaining milk sugar in comparison with known ways.
