FIELD: dairy industry.

SUBSTANCE: invention relates to the dairy industry. The method for obtaining dry whey is carried out as follows. The whey is cleaned sequentially from casein dust and/or fat. Pasteurization is carried out, followed by nanofiltration or ultrafiltration of whey. Whey is demineralized or ultrafiltrated with lactose isomerization into lactulose at pH 10±2 and temperature 15-70°C for 30-120 min. Correction of serum pH is carried out by introducing an alkaline agent. Demineralization is carried out until the pH of 6.49-6.54 of serum and the degree of demineralization (DM) is 90%. The concentrate is condensed to a dry matter content of 40-60% and crystallized. The concentrate is dried in several stages, at which the serum concentrate is dosed into the drying chamber on a spray disc and one part of the heated to 160-230°C hot air is fed into the upper gas distribution system of the drying chamber. The second part of the hot air is fed into the air distribution system, which creates the effect of turbulence of the air flow. The third part of the hot air is fed into the air distribution system, which creates a suspended layer of serum in the dryer cone. The dried whey is sent to a vibro fluidizer, into which heated air is fed along one line, and cooling air is supplied along the second line to dry the whey powder in a suspended layer to a residual humidity of 4-2%. From the vibro fluidizer, the powder is fed into a hopper cooler of finished products.

EFFECT: invention provides a reduction in the complexity of the method for obtaining whey powder and improving the quality of the finished product.
