FIELD: dairy industry.

SUBSTANCE: method for production of milk sugar envisages ultrafiltration of skim milk or milk whey, nanofiltration of permeate, electrodialysis to level of demineralisation of 90 % of initial ash content, condensation, crystallisation of lactose, separation of lactose crystals, their washing and drying, wherein nanofiltration is carried out according to a periodic scheme, starting from a fixed volume of raw material, which is 15–20 % of the initial volume of raw material, with further supply of remaining part of raw material to extracted volume at rate equal to filtrate discharge rate obtained during nanofiltration.

EFFECT: invention increases level of demineralisation of raw materials to 0,52–0,60 without reducing efficiency of the NF-plant, shorter time for subsequent ED processing to achieve the required level of demineralisation, obtain product purity 99–99,5 %.
