FIELD: food industry.
SUBSTANCE: following is proposed: a method of producing milk sugar which involves ultrafiltration of skim milk, nanofiltration of permeate to a desalting level of 70–90%, thickening, crystallization of lactose, and drying. Crystallization is performed in two stages, and before drying, the crystallisate is heated.
EFFECT: invention improves the yield and quality of the product.
