FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved food. According to the method pre-processed cucumbers are packed in jars. The jars are put in microwave oven with frequency2400±50 MHz and 100-110 seconds, filled with brine at 95°C. After that jars are closured. They are repeatedly put in microwave oven with frequency 2400±50 MHz for 80-90 seconds with following maturing in warm air chamber at 105-110°C during 8-10 minutes, staged cooling in atmosphere air flow and water spraying during 20 minutes.
EFFECT: decrease of the sterilisation process length and decrease of inequality of thermal processing.
