FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Pre-processed beet roots are packed in jars; the jars are put in microwave oven for 110-120 seconds. After that, the jars are filled with filler 97°C hot, sealed and sterilised in autoclave.
EFFECT: invention allows to reduce process time of preserves heat sterilisation and irregularity of product thermal treatment, increase quality of end product, save thermal energy.
