FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Preservation method is characterised by the fact that beetroot is packed in containers before filling at temperature of 97°C, and put in microwave chamber during 170-180 sec. Repeatedly it is exposed to processing in microwaves then sealed and sterilised in autoclave.
EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity, Increases quality of finished products.
