FIELD: food industry.
SUBSTANCE: method comprises putting beetroot disposed in jars into microwave chamber for 110-120 s with frequency of 2400±50 MHz. Hereafter jars are filled with filling at 97°C hot, and are additionally UHF-treated. Then they are sealed and sterilised in autoclave.
EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
