FIELD: food production process.
SUBSTANCE: white roots and onions are cut, blanched and strained. Sugar peas and herbs are cut and frozen. Rabbit meat is cut, wheat flour is browned in melted butter, the above-mentioned ingredients are mixed with white dry wine, table salt, citric acid, black bitter pepper and bay leaves under oxygen-free conditions. The resultant mixture and bone broth are packaged, vacuum-sealed and sterilised.
EFFECT: new canned food features improved digestibility as compared to a similar dish.
