FIELD: food industry.
SUBSTANCE: amorphous water-soluble calcium citrate salt with molar ratio calcium to citrate within the limits from approx. 1:2 to less than 2.5:2. Amorphous water-soluble calcium citrate salt containing approximately 10 mg of calcium for fluid ounce doesn't make visible darkening or deposition during at least 2 days at environmental temperatures while dissolving in water. Powdered mixtures for beverages preparation and fluid compositions are enriched with amorphous water-soluble calcium citrate salt as calcium source. Production method of amorphous water-soluble calcium citrate salt includes formation of reaction mixture by adding of calcium to citric acid in water solution at temperature approximately 60°C. At the same time calcium citrate is build up with molar ratio calcium to citrate within the limits from 1:2 to less than 2.5:2 and drying of reaction mixture. The drying is performed before aging of reaction mixture during a period of time.
EFFECT: excellent dispersability, solubility, appearance and stability while storaging.
