SUBSTANCE: present invention relates to methods of beverages enrichment with one or more phytochemical citrus substances, masking the bitter taste of these compounds in the beverage. These methods involve microencapsulation of phytochemical citrus substances and addition of microencapsulated phytochemical citrus substances into beverages. Additionally, the present invention relates to beverages enriched with one or more microencapsulated phytochemical citrus substances but without the bitter taste of these compounds.
EFFECT: invention ensures bitter taste masking.
