FIELD: food industry.
SUBSTANCE: according to the proposed method common licorice roots are previously concentrated till dry substance content C=42 - 52% and put on the working surface. Product layer thickness is h = 0.5 - 2 mm. Extract drying is performed in vacuum with infrared heat flow density E=0.91 - 2.5 kWt/m2 at residual pressure in vacuum chamber not more than 10 KPa.
EFFECT: method allows to increase outcome of common licorice roots dry extract.
