FIELD: food industry.
SUBSTANCE: invention relates to biotechnology and microbiology. Ovarian liquid of sturgeon fishes is preliminarily filtered, concentrated till dry substances content C=48 - 66% and foamed till foam with maximum expansion factor is generated. The foam is applied in vacuum onto a flat carrier in a h =1 - 4 mm thick layer and dried subjected to infrared radiation with density of heat flux E=0.83-2.25 kW/m2 and residual pressure in the vacuum chamber P- no more than 9 kPa.
EFFECT: invention allows to increase dry protein product yield (0,97 - 1,07%) and its removal rate "П" (0,66 - 8,51 kg/(m2*h)).
