FIELD: food industry.

SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved pickled scallops. According to the preservation method scallops are put in jars, jars are put in microwave oven for 120-130 seconds. After that filler at 95°C is added. It is repeatedly processed in microwave oven during 90-100 seconds, sealed and sterilised in autoclave according to the new mode.

EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
