FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Two-stage apricote compote warming up in water at 80 °C and 100 °C respectively 10 and 20 minutes with following cooling in air flow during 15 minutes at speed 5-6 m/s are performed. Cooling is continued with drawing of 14 mm water slick on tin-plate can during 5 minutes. During heat treatment, the tin is turned upside down with frequency of 0.33 s-1.
EFFECT: invention allows to reduce process time of preserves heat treatment and irregularity of product thermal treatment, increase quality of end product, save thermal energy and water.
