FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved scallops. According to preservation method scallops are pre-processed, put in jars, processed by microwave field with frequency of 2400±50 MHz during 95-100 seconds, after that jars are filled with filler at 95°C. Then the jars are closured and sterilised in autoclave.
EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
