FIELD: food industry.
SUBSTANCE: device includes a vessel for directly squeezed juice connected to the feed vessel with an electric heater via a pipeline, an evaporator with an electric heater, thermoregulator and a liquid trap, the horizontal and the vertical condensers, the main and the additional water sumps interconnected via pipelines, a receptacle vessel for concentrated juice and three vacuum pumps. One of the latter is connected to the feed vessel receptacle vessel for concentrated juice, the second - to the main and the additional water sumps while the third - to the additional sump. The evaporator is connected to the horizontal condenser (via a vapour line), to the receptacle vessel (via a direct flow vacuum lock) and to the feed vessel via the pipelines with vacuum valves).
EFFECT: invention enables reduction of the process duration by a factor of 2,5 and to enhance operational efficiency of the device for production of natural water and concentrated juice through a continuous cycle.
