FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved scallops. According to the method pre-processed scallops are packed in jars; the jars are filled with water at 90°C and thus maintained during 2-3 minutes. After that the jars are drained, refilled with brine heated at least to 95°C, closured and autoclaved. Sterilisation process provides for water warming in autoclave to 100°C during 12 minutes, sterilisation during 15 minutes and cooling during 20 minutes.
EFFECT: invention allows to reduce process time of preserves sterilisation and irregularity of product thermal treatment, save thermal energy, increase end product quality.
