FIELD: food industry.
SUBSTANCE: kissel contains fruit-berry component in preset ratio, sweetener, polysaccharide and water extract of maral unossified antlers with sweet substances content 0.8-1.0%. Seaweed or microbe polysaccharide or mixture of seaweed and microbe polysaccharide is used as vegetable polysaccharide. Sugar or sucrazite or mixture of sugar and sucrazite is used as sweetener. Sodium alginate or carrageenan is used as seaweed polysaccharide, xanthan is used as microbe polysaccharide, galactomannan or mixture of seaweed and vegetable polysaccharides in ratio 1:1, namely carrageenan and galactomannan are used as vegetable polysaccharide. Karoban or mannan cognac are used as galactomannan. Fruit-and-berry decoction is prepared and sweetener is added. Polysaccharide is swelling at 23-25°C during 30-40 minutes. Polysaccharide solution is warmed up to 85-90°C and added to fruit-and-berry decoction at 85-90°C. The mixture is thermostated while mixing during 3-10 minutes. Polysaccharide solution is cooled along with decoction and sweetener till 35-45°C. Maral unossified antlers water extract is warmed up to 35-40°C and added to cooled mixture of polysaccharide, decoction and sweetener at 35-45°C.
EFFECT: invention allows to obtain curative kissel with high treatment-and-preventive, nutrient and organoleptic properties.
