FIELD: food industry.

SUBSTANCE: invention relates to food industry, namely to production of functional foods from fruits and berries enriched with collagen. Method of production of drinking kissel enriched with collagen for functional nutrition comprises sorting of honeyberries and actinidia, removal of stalks and sepals, washing, grinding and pulping to obtain a particle size of 0.8 mm. Red ash berries and black chokeberries are inspected for quality, twigs, stalks and sepals are removed, berries are washed with cold running water, ground, scalded with direct steam and pulped to obtain a particle size of 0.8 mm. Collagen hydrolyzate is mixed with water to obtain a 46 % solution. Starch is mixed with sugar and xanthan gum and the mixture is introduced into 1/3 of cold water with continuous stirring by a mechanical stirrer. After that, the components are mixed in accordance with preset formulas (with the exception of collagen hydrolyzate), the mixture is heated to a temperature of 85 °C, solution of collagen hydrolyzate is added and heated to a temperature of 97–98 °C. Obtained product is then hot-filled into a pre-sterilized hot container and immediately closed.

EFFECT: invention provides the production of kissels in a single technological complex using the low-waste technology with the yield of honeyberry and actinidia puree of 90–95 % and the yield of red ash berry and black chokeberry puree – 82–85 %; invention also provides increased nutritional value.
