FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely, to the production of functional food products from berries. Proposed is a method for producing drinking kissels with dietary fibres, involving the use of rosehip berries, or cranberry berries, or lingonberry berries, and includes receiving, sorting fresh berries, or pre-defrosting quick-frozen berries, or hydrating dried berries, followed by loading the berries into a mechanoacoustic apparatus and subjecting to a hydroacoustic effect with an intensity of 100 to 500 W/kg in the presence of water, resulting in a semi-finished berry product with a dry matter content of up to 55%; a mixture of psyllium, sugar, xanthan gum, and water, pre-prepared in a backup container, is then introduced into the semi-finished berry product; following are sterilisation at 95 to 97°C, hot bottling, capping, and storage of the product in a cooled state and without access of air in condition of non-controlled above-zero temperatures for 12 months.
EFFECT: production of drinking kissels from berries with original organoleptic characteristics and a high content of dietary fibres.
