FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Pre-processed scallops are packed in jars. Before filling with brine jars are treated with microwave field with frequency 2400±50 MHz during 85-90 s. After that they are filled with brine warmed up to 97°C. After that scallops are repeatedly treated by microwave field with frequency 2400±50 MHz during 90-100 s, sealed and sterilised in autoclave according to the new preset mode.
EFFECT: invention allows to decrease thermal processing duration, enhance treatment uniformity, increase finished product quality with simultaneous saving of thermal energy and water.
