FIELD: food industry.
SUBSTANCE: invention is related to coffee substitutes production technology, namely to technology of production of instant powder for production of flavoured coffee beverages. Anise is extracted by liquid nitrogen with corresponding miscella separation. Girasols\sunflowers are prepared and cut. It is dried in microwave field till residual humidity about 20% at microwave filed power providing warming of girasols/sunflowers inside the bits till temperature 80-90°C during at least an hour. Rosehips are prepared and cut. After that drying of in microwave field till residual humidity about 20% at microwave filed power providing warming of rosehips inside the bits till temperature 80-90° is performed during at least an hour and drying till residual humidity about 5 % by convective method is performed. Barley grains, acorns, nut kernels, fruit bones and soya are fried. Girasols/sunflowers, rosehips, barley grains, acorns, nut kernels, fruit bones and soya are simultaneously put into cryomiller in mass ratio 2:1:6:6 : 1 : 1 : 3, are mixed; obtained mixture is impregnated with separated miscella with simultaneous pressure boost till pressure level of nitrogen saturated vapours at impregnation temperature. Depressurisation till atmosphere pressure is performed along with mixture freezing. It is cryomilled in medium of evolved nitrogen.
EFFECT: method allows to produce flavoured coffee drink out of non-traditional raw materials according to nonwaste technology.
