FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method involves preparing recipe ingredients, black tea extraction with liquid nitrogen with separation of the corresponding miscella, cutting of girasol-sunflower, its drying in microwave field till residual humidity about 20% at the microwave field power providing warming of girasol-sunflower inside the bits to 80-90°C for at least an hour and frying, cutting rosehips and drying them in microwave field till residual humidity about 20% at the microwave field power providing warming of rosehips inside the bits to 80-90°C for at least an hour and further drying them up till residual humidity about 5% by convective method, roasting barley grain, acorns, kernels of nuts and fruit pits and soya, mixing girasol-sunflower with rosehips, barley grain, acorns, kernels of nuts, kernels of fruit bones and soya at mass ratio 2:1:6:6:1:1:3, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method enables to produce a new coffee drink out of unconventional raw material according to nonwaste technology.
