FIELD: food industry.
SUBSTANCE: invention relates to food and pharmaceutical industry, namely to production of dry food fiber from byproduct of pectin production. The fiber is used in meat and confectionary industry and in production of products of dietary and general health proposes. Food fibers pulp is dehydrated till moisture content 75-80% by pressing. Drying is performed in boiling layer in two stages. On first stage at drying agent temperature 145-150°C at speed 12.5-12.75 m/s till moisture content 10-12% On second stage at drying agent temperature 25-30°C at speed 4.5-5 m/s till moisture content 9-10%
EFFECT: delicate dehydration regimes activate, method allows to obtain dry food fibers of high quality, increase dry food fibre outcome, lower dehydration energy costs.
