FIELD: food-processing industry, in particular, beet pulp processing.
SUBSTANCE: method involves processing beet pulp using steam having temperature of 125-130 C during 15-20 min; saturating beet pulp with 2.0-2.5%-hydrogen peroxide solution during 8-10 min at temperature of 55-65 C, followed by pressing until dry substance content is 15-16%; feeding beet pulp fibers into drying chamber and simultaneously providing hydrolysis of prospecting in fibers; clarifying and drying fibers at temperature of 78-80 C during 1.2-1.5 hours until moisture content reaches 10-12%; grinding resulted clarified fibers with 12-15% content of water-soluble pectin substances in disintegrator and directing for extraction of water-soluble pectin substances from hydrolyzed pulp fibers; separating extract; cleaning; condensing under vacuum at temperature of 62-64 C until dry substance content is 11-12%; drying concentrate in drying unit; pressing fibers clarified after extraction process; drying and using as food additive. Ready product is pectin-containing powder produced from extract and containing up to 15% of water-soluble pectin substances, soluble hemi-cellulose, mono-saccharides, up to twenty macro- and microelements, essential amino acids.
EFFECT: improved quality of powder allowing it to be used as biologically active pectin-containing additive for medical purposes.
