FIELD: food-production industry. SUBSTANCE: according to method, beet pulp is disintegrated down to particle size of 1.5-2.0 mm. Soluble substances are extracted from disintegrated pulp by means of sulphitated water with pH 5.0-5.2 in single stage at temperature of 80-85 C during 10-15 min and separation of extract from mass of pulp particles subjected to extraction. Then, pulp is treated by steam for deodorizing and removing of beet flavor. Thus produced vegetative fibers are dried, disintegrated down to required sizes of particles and packed. Application of aforesaid method ensures simplification of technological process and allows for increasing yield of fiber from beet pulp together with improving its quality.
