FIELD: food industry.

SUBSTANCE: invention is intended for usage in food industry during manufacture of products with additives and is relates to the processes for production of food fibres of vegetal raw materials. The extruded food fibres production method envisages beet pulp pressing, pressed vegetal mass treatment with saturated vapour, the mass extraction, vegetal fibres pressing, drying, milling, mixing with starch-containing raw materials and water and the produced mixture extrusion. Extraction of pressed beet pulp is performed with 0.15-0.2% acetic acid solution at a temperature of 66-80°C; the starch-containing raw materials are represented by maize starch in an amount of 45% of the food fibres weight.

EFFECT: proposed method allows to obtain extruded food fibres with enhanced adsorption and water absorbing capacity and improved technological characteristics.
