FIELD: food-processing industry. SUBSTANCE: method involves pressing beet pulp till dry substance content reaches 16.0-18.0%; extracting soluble substances by sulfited water and separating extract from mass of extracted particles; treating plant mass with steam for deodorizing and eliminating beet flavor; pressing plant fibers till dry substance reaches 1.5-2.0 mm; drying and repeatedly grinding to powder state. Method allows by-product of beet sugar industry to be utilized in the process of obtaining edible beet fibers. EFFECT: improved quality of ready product, increased yield, reduced power consumption for pressing and drying of plant fibers. 1 ex
