FIELD: chemistry.
SUBSTANCE: invention relates to a method of producing hydrolysates from plant or animal material which contains protein. The material is split in an aqueous medium at temperature ranging from 180°C to 220°C for 25 to 45 minutes. Pressure in the reaction chamber is kept between 50 to 75 bars. The suspension obtained after the splitting process is separated into a residue, which contains insoluble components of the initial material and a top water layer, in which products of splitting the material are dissolved.
EFFECT: invention allows for production of a hydrolysate of a defined range of molecular weight without process steps for regulating pH and without enzymatic process steps.
