FIELD: biotechnology; food industry.
SUBSTANCE: invention relates to food and biotechnology industry, aims at producing a food-grade highly-digestible protein additive in form of a water-soluble powder, which is obtained from high-mineralized collagen-containing meat and bone raw material, for example, beef bones. Meat-bone raw material is milled, homogenised in a liquid medium, thermohydrolysis is carried out at temperature of 150–170 °C and pressure of 10–12 bars for 2–4 hours, cooling, fractionation with separation into sedimentary protein-mineral fraction, fat and protein liquid fraction. Obtained sedimentary protein-mineral fraction is subjected to enzymatic hydrolysis by addition of aqueous solution of proteolytic enzyme of collagenase specificity at ratio sediment : solution as 1:1–1:3, and the mixture is held for 1–3 hours at temperature of 35–45 °C, after which the mixture is heat treated at temperature of 150–170 °C and pressure of 10–12 bars for 2–4 hours, then cooled and fractionated with separation into fat, mineral substances and liquid protein fraction, which is connected to liquid protein fraction obtained after thermal hydrolysis, after which obtained mixture is concentrated and dried. Thermohydrolysis, enzymatic hydrolysis and heat treatment are performed under ultrasound at frequency 22–26 kHz at power 140–150 W. Liquid defatted and demineralised fractions obtained after the first and second thermal hydrolysis are dried.
EFFECT: obtaining a protein supplement consisting of biologically active peptides with molecular weight of 10–100 kDa, having complete solubility and storage life of about 2 years.
