FIELD: food industry.
SUBSTANCE: alcohol-free grape beverage contains per 100 dhal of end beverage: 70.2-75 kg of sugar, 1.0 - 2.0 kg of citric acid, 3.0 - 6.4 kg of grape fruitade (70% fresh.), 5.8 - 7.0 kg of alcoholised grape juice (30 vol. proof%), cooking-technical juice "Isabella" or "Muscat Derbetskiy" is used for this purpose. Besides beverage contain 0.1-0.2 kg of natrium benzoate, 14.2-15.1 kg of carbon dioxide and the rest is water. Beverage has golden colour and contains 11.2% of dry substances, 9.7 % of sugars, 0.4 vol. % of alcohol and 50 mg % of C vitamin. Main acidity makes 3.5%.
EFFECT: this allows to produce beverage with increased food and biological value, pleasant mild tonic taste and strong aroma of fresh grapes.
