FIELD: food industry.
SUBSTANCE: invention relates to production of alcohol-free beverages based on concentrated grape juice. The alcohol-free beverage contains 80-150 g of concentrated grape juice and liquid additives of vegetable raw material per 1 l of the ready beverage. The liquid additives of vegetable raw material are represented by 3.0-5.0 g of Hibiscus Sabdariffa species plant extract, 0.2-0.4 g of cloves extract, 1.5-3.5 g of ginger extract and 1.5-3.5 g of nutmeg extract. Additionally, the beverage contains 50-110 g of sugar and/or sugar substitute and water -balance. The beverage may contain 1.5- 4.0 g of citric acid as well as 0.1-0.3 g of culinary salt per 1 l of the ready beverage.
EFFECT: invention ensures production of an alcohol-free beverage similar to alcohol-free wine in terms of its organoleptic properties.
