SUBSTANCE: invention relates to food industry and can be used on meat processing facilities for skinning of animals. Flaying knife includes pneumatic motor making a pair of disc blades make oscillative motion in opposite directions and a regulator controlling motor speed. Regulator loads acting like centrifugal weights are rotating together with the motor and push inclined flange of valve head for moving of valve head to the valve seat. Valve head movement pushes moving spring and limits pressed air flow when exceeding desired speed. When speed goes down, centrifugal speed goes down and moving spring opens the valve for providing motor with additional power. Disc blades are equipped with cylindrical central bulge which significantly increases central support inner side face area where blades rotate and provides significant longer blade service life.
