FIELD: chemistry.
SUBSTANCE: invention relates to oil and fat industry. The method involves alkaline hydrolysis using ethanol and extraction of the hydrolysis product using a solvent. Fat-containing emulsion substance is subjected to hydrolysis using ethanol in volume which is 3-120 greater than the volume of the aqueous component of the fat-containing emulsion substance. Water is then added to the hydrolysis product. During extraction, benzene is used as the solvent, volume of which is not less than 1.6 times greater than the volume of added water and the aqueous component of the substance.
EFFECT: extraction of isoprenoids with low impurity content and increase in accuracy of detecting isoprenoids in food.
