FIELD: food industry.
SUBSTANCE: invention relates to the field of the food industry, in particular to the confectionery industry, and can be used to control the quality of confectionery products. Method for the determination of B2 vitamin in confectionery products includes the sequential conduct of acid and enzymatic hydrolysis of the sample followed by filtration, photolysis, fluorometric determination and processing of the results, and before the photolysis, the aqueous phase obtained after filtration is concentrated by solid-phase extraction.
EFFECT: invention improves accuracy and reduces the minimum threshold for determining the mass fraction of B2 vitamin in confectionery.
