FIELD: food industry.

SUBSTANCE: invention refers to food industry and can be used for fruit preserving in hermetically sealed packages corresponding to different types of glass or any other packages. The method consists in fruit preparing and washing, in filling packages with preserving solution, in pasteurisation and in hermetical sealing. The following fruit as Ziziphus Mauritania and/or jujube, and or Chinese date, and/or Zizyphus mauritiana Lamk, and/or Zizyphus jujube Mill, and/or Ziziphus chloroxylon, and/or Ziziphus guatemalensis, Ziziphus mauritiana, and/or Zizyphus jujuba Lamk are used as preserved fruit; also preserving solution consists of water and sugar at specified ratio of components. Additionally, preserving solution can contain acetic acid, acetic acid and currant juice, acetic acid and gelatine, lemon juice, citric acid, citric acid and honey, vanilla sugar and also spicery: cloves and/or cinnamon, and/or allspice tree, and/or lemon, and/or ginger, and/or anise-tree, and/or Chinese magnolia-vine at specified ratio of ingredients.

EFFECT: invention facilitates high consumer qualities of preserved product.
