FIELD: food industry.
SUBSTANCE: method is implemented like follows. Dry skim milk is reduced. Fat normalisation is carried out with mixture of vegetable oils: corn and palm oils and pork and butter fats to ratio of fat components in normalised mixture from 3:11:1:2 to 4:13:2:4. Further produced mixture is emulsified and homogenised. Granulated sugar is added. The mixture is pasteurised, purified and cooled. Primer as fine-crystallised lactose is introduced. Lactose is crystallised. The product is finish cooled, pre-packed, packed, labelled, stored and sold.
EFFECT: invention facilitates production of milk containing concentrated product with sugar on base of composition of fats balanced by fat-acid contents and possessing stable quality indices during storage.
