FIELD: dairy industry.
SUBSTANCE: invention relates to the dairy industry. A method for the production of a concentrated milk product with sugar is implemented as follows. The skimmed milk powder is reconstituted, normalized by adding dehydrated melted milk fat, and the mixture is homogenized. Granulated sugar is added simultaneously with a flavoring additive, which is carob in the form of a dry powder or syrup. The resulting mixture is pasteurized, cooled, seeded in the form of finely crystalline lactose, crystallized and the finished product is cooled down. The content of the components is expressed as kg per 1000 kg of the finished product: skimmed milk powder 230, milk fat 82.7, granulated sugar 428 - 432, carob - dry powder or syrup 3.0 - 7.0, fine crystalline lactose 0.2, water 248.1.
EFFECT: invention provides obtaining a product of increased nutritional value.
