FIELD: dairy industry.
SUBSTANCE: invention relates to dairy industry. Method provides for reduction of mixture of dry skim milk and dry whey protein concentrate, taken in ratio from 4:1 to 10:1, injection of sugar and fat, emulsification, filtration, homogenization and pasteurization. Mixture is cooled, seeded, followed by crystallization and post-cooling of finished product.
EFFECT: method allows to increase biological value of finished product and improve its quality.
