FIELD: food industry.
SUBSTANCE: method provides for packing the marrows into jars. The marrows packed into jars are sterilised in the microwave field for 80-90 sec. After that the jars are filled with pickle at 97°C, sealed and sterilised in autoclave.
EFFECT: invention enables to reduce sterilisation duration and enhance treatment uniformity.
