FIELD: food industry.

SUBSTANCE: invention is related to preserved food industry. Marrows are put in jars, jars are filled with brine at 97°C and put in microwave oven for 100-110 seconds. Jars is repeatedly processed in microwave chamber during 90-100 seconds, sealed and sterilised in autoclave according to the new mode with two-staged cooling.

EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
