FIELD: food industry.
SUBSTANCE: invention relates to a liquid composition of fibres, a method for producing and application for preparing food products thereof. The method of producing the liquid composition comprises selection of a fibre material in which the content of soluble grain based fibre is at least 0.8 % by weight of its dry residue, mixing up the fibres with an aqueous medium to obtain a mixture containing above 1 % by weight of the fibre material and homogenisation thereof. The process of homogenisation is performed so as to obtain a liquid fibre composition which has a form of a liquid dispersion at a temperature of 4°C. The total content of dietary grain based fibres is at least 1.6 % by weight and the content of water soluble dietary fibres is at least 0.8% by weight. In the course of homogenisation process the mixture viscosity is reduced at least by 40% of the viscosity of corresponding non-homogenised and completely hydrated dispersion at a shear rate of 20-100 sec-1. The obtained food composition is used for preparing food products.
EFFECT: invention enables to obtain a composition retaining low viscosity for a long period of time thus enabling to pack and to keep the composition in a liquid form.
