FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to the process of manufacturing coffee substitutes. The method provides for preparing the recipe components. Cacao shells are extracted using liquid nitrogen with correspondent miscella separation. Chicory roots are cut, dried in a microwave field at given process parametres and roasted. Rosehips, apples and pears are cut, dried in a microwave field at given process parametres and convectively post-dried. Barley grains are roasted. The chicory roots, barley grains, rosehips, apples and pears are mixed together. The obtained mixture is impregnated using the separated miscella with simultaneous pressure increasing, then the pressure is relieved to the atmospheric one, the mixture is simultaneously frozen and subject to cryogenic grinding in the environment of released nitrogen.
EFFECT: method enables to obtain a flavoured coffee drink using a waste-free technology.
