SUBSTANCE: invention relates to the process of manufacturing coffee substitutes. The method provides for preparing the recipe components, extracting star anise using liquid nitrogen with correspondent miscella separation, cutting chicory roots, drying in a microwave field at given process parametres and roasting thereof, cutting rosehips, drying in a microwave field at given process parametres and convective post-drying thereof, roasting barley grains, acorns, nut kernels, fruit kernels and soya beans, mixing up the chicory roots with the rosehips, barley grains, acorns, nut kernels, fruit kernels and soya beans in the released medium, impregnating the obtained mixture with the separated miscella while simultaneously increasing the pressure, then relieving the pressure to the atmospheric one, simultaneously freezing the mixture and subjecting it to cryogenic grinding in the environment of released nitrogen.
EFFECT: invention enables to obtain instant powder for making a flavoured coffee drink using a waste-free technology.
