FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to technology used to produce coffee substitutes. Method provides for preparation of formula components, extraction of jeera with liquid nitrogen to separate according miscella, cutting of yacon, its drying in microwave field down to residual moisture of 20% at microwave field capacity providing for heating of yacon to the temperature inside pieces reaching 80-90°C, for at least one hour, and frying, frying of barley grain, mixing of yacon and barley grain, acorns, nut kernels, fruit kernels and soya beans in mass ratio of 7:3. Then produced mixture is impregnated with separated miscella with simultaneous increase of pressure, pressure collapse down to atmospheric one with simultaneous freezing of mixture and its cryo-grinding in medium of released nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink according to wasteless technology.
