SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for extraction of cinnamon with liquid nitrogen to separate according miscella, girasol-sunflower cutting, drying in microwave field at specified parametres of the process and frying, apples cutting, drying in microwave field at the specified parametres of the process and their additional convective drying, black chokeberry drying in microwave field at specified parametres of the process and its additional convective drying, mixing of girasol-sunflower, apples and black chokeberry, impregnation of produced mixture with separated miscella with simultaneous increase of pressure, pressure collapse down to atmospheric one with simultaneous freezing of mixture and its cryo-grinding in medium of released nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
