FIELD: food industry.
SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for extraction of cloves with liquid nitrogen to separate according miscella, preparation of girasol-sunflower, apples and black chokeberry, cutting of girasol-sunflower and apples, their drying in microwave field down to residual moisture of around 20% with microwave field capacity providing for raw materials heating until the temperature inside pieces reaches 80-90°C, for at least 1 hour. Black chokeberry is dried in microwave field down to residual moisture of around 20% with microwave field capacity providing for black chokeberry heating until the temperature inside berries reaches 80-90°C, for at least 1 hour. Then girasol-sunflower is fried, additional convective drying of apples and black chokeberry is carried out down to residual moisture of around 5% by convective method. Further girasol-sunflower, apples and black chokeberry are mixed in mass ratio of 10:9:1. Then produced mix is impregnated with separated miscella with simultaneous increase of pressure, pressure is reduced down to atmospheric one, simultaneously mix is frozen and cryo-ground in medium of released nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
