FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of canned "Side order carrots". Under the method cut carrots after preliminary preparation are packed in jars and filled with at least 95°C hot water for 2-3 min. After that water is replaced with 95-97°C hot filler, the jars are sealed and sterilised in autoclave according to mode with following cooling in other autoclave or container in accordance with mode .
EFFECT: this enables decreasing sterilisation duration period combined with thermal energy and water saving.
